  • 1/4 cup All-purpose flour
  • 1 Buffalo seasoning mix
  • 1 cup Japanese style plain panko bread crumbs
  • 2 Large eggs, beaten
  • 10 oz Frozen cauliflower florets
  • 1 Vegetable oil no-stick cooking spray, as needed
  • 1 cup Non-fat plain Greek yogurt
  • 1/4 cup Crumbled Blue Cheese
  • 1 tsp Garlic powder
  • 4 Spinach herb wraps
  • 1 cup Matchstick carrots
  • 2 cups Shredded iceberg lettuce, shredded

Instructions

  1. Preheat oven to 400ºF.
  2. Place flour and 1/2 of Buffalo seasoning in one resealable bag and panko bread crumbs in a second. Place beaten eggs in a shallow dish.
  3. Toss cauliflower first in flour mixture then in the egg followed by the bread crumbs. Place breaded cauliflower on a foil lined sheet pan.
  4. Lightly spray cauliflower with non-stick spray then place in oven. Bake for 15 minutes turning once.
  5. Meanwhile, combine yogurt, blue cheese crumbles and garlic powder together to make a sauce.
  6. Once cauliflower is done, toss with the remaining Buffalo seasoning.
  7. To build the wrap, warm the wraps gently in the oven or microwave. Spoon in a generous amount of blue cheese sauce and then cauliflower, then carrots and lettuce. Roll up the wrap tucking in the sides as you roll. Cut in half and serve.
