Unsaved Creamy Spicy Red Lentil Pasta

Ingredients

  • 5 oz Fresh baby spinach
  • 4 oz Gluten free red lentil pasta, dry
  • 7 oz Greek yogurt dip, jalapeno
  • 1/4 cup Sun-dried tomato pesto, (can also substitute H-E-B Basil Pesto, if you prefer)

Instructions

  1. Bring water to a boil in a large pot and cook pasta according to package directions.
  2. While pasta is cooking, place yogurt dip, pesto, and spinach in a large skillet over medium-low heat. Stir and cook to wilt spinach and combine.
  3. Drain pasta, reserving 1/2 cup of pasta water. Stir reserved pasta water into sauce and add drained pasta. Stir to coat noodles and serve.
