Creamy Parmesan Chicken with Asparagus and Tomatoes

Ingredients
- 12 oz Capellini pasta, dry
- 2 tbsp Extra virgin olive oil
- 1 lb Boneless, skinless chicken breasts, cut into 3/4-inch cubes
- 8 oz Asparagus, woody ends removed and cut into 1-inch pieces
- 1 pt Cherry tomatoes
- 9 oz Parmesan cooking sauce
- 1 tbsp Fresh parsley, chopped
Instructions
- Bring a large pot of water to boil and cook pasta according to package directions, drain and set aside.
- Place oil in a large non-stick skillet over medium-high heat.
- Add in chicken and cook until well browned on all sides, remove from pan to a bowl.
- Add in asparagus and tomatoes to the same pan. Cook several minutes tossing frequently until tomatoes begin to wrinkle and asparagus is tender, returning chicken to pan.
- Pour in cooking sauce and bring to a simmer, cook several minutes until chicken is cooked through.
- Toss chicken and vegetable sauce with pasta and garnish with parsley.
