  • 1/4 cup Fresh cilantro, finely chopped
  • 1 Large Haas avocado, cubed

Instructions

  1. Heat a large heavy pot on medium-high. Add oil and onions, and stir and cook 2 to 3 minutes or until onions begin to soften.
  2. Add chicken and stir and cook 5 to 6 minutes or until chicken begins to lightly brown.
  3. Stir in salsa verde, chicken stock and crema. Bring to a simmer and cook 4 to 5 minutes.
  4. Add cannellini beans, corn and power greens. Stir through just to heat and allow flavors to meld, about 3 to 4 minutes.
  5. Finish with fresh cilantro and avocado.
