Creamy Chicken Chili Verde

Ingredients
- 1 tbsp Extra Virgin Olive Oil
- 1/2 cup Sweet onions, finely diced
- 1 1/4 lb Seasoned Diced Skinless Chicken Thighs
- 1 cup Tomatillo Sauce
- 1 cup Chicken stock
- 1 cup Crema Mexicana
- 15 oz Cannellini beans, drained and rinsed
- 15.2 oz Corn, about 1.5 cups (frozen, fresh or canned)
- 2 oz Fresh super greens, chopped
- 1/4 cup Fresh cilantro, finely chopped
- 1 Large Haas avocado, cubed
Instructions
- Heat a large heavy pot on medium-high. Add oil and onions, and stir and cook 2 to 3 minutes or until onions begin to soften.
- Add chicken and stir and cook 5 to 6 minutes or until chicken begins to lightly brown.
- Stir in salsa verde, chicken stock and crema. Bring to a simmer and cook 4 to 5 minutes.
- Add cannellini beans, corn and power greens. Stir through just to heat and allow flavors to meld, about 3 to 4 minutes.
- Finish with fresh cilantro and avocado.
