Creamy Chicken Avocado Salad

Ingredients

  • 2 lb Boneless Skinless Chicken Breasts
  • 2 tsp Maldon Smoked Sea Salt, or as needed
  • 2 tsp Oak Smoked Coarse Ground Black Pepper, or as needed
  • 1 Jumbo avocado, pit and skin removed, avocado meat diced small
  • 1 cup Celery, diced small
  • 2 tbsp Fresh chives, minced or diced small
  • 1/2 cup Plain Greek Yogurt
  • 1/4 cup Lime juice, plus 1 tsp fresh lime zest
  • 1 tbsp Worcestershire Sauce, plus more as needed to taste
  • 2 tbsp Dijon Mustard
  • 1 tsp Garlic Powder

Instructions

  1. Preheat oven to 375ºF. Line a sheet pan with foil or parchment paper.
  2. Season chicken breasts liberally with smoked salt and black pepper on both sides. Place on prepared sheet pan.
  3. Roast for 30 to 35 minutes or until chicken's internal temperature reaches at least 165ºF.
  4. Remove from oven and allow to cool before dicing into small pieces. Meanwhile, prepare other ingredients.
  5. In a large bowl, combine avocado, celery, chives, Greek yogurt, lime juice and zest, Worcestershire sauce, Dijon mustard, garlic, and cooled diced chicken.
  6. Toss to combine until creamy then season to taste and refrigerate until ready to use.
  7. Chef's Note: Serve as a sandwich spread, with crackers or in lettuce cups for a great appetizer.
