Creamy Celery Root and Leek Soup

Serves 8

Ingredients

  • 4 tbsp Butter
  • 1 Small yellow onion, peeled and rough chopped
  • 2 Large garlic cloves
  • 2 Leeks, white parts only, root removed, rinsed well
  • 1 1/2 lb Celery root (celeriac), peeled and diced into 1/4 inch pieces
  • 2 tsp Salt
  • 1/4 tsp Cayenne pepper
  • 1/2 tsp White pepper
  • 1 tsp Dried thyme
  • 1 Bay leaf
  • 2 cups Chicken broth
  • 1 cup Heavy cream

Instructions

  1. Place butter in a large heavy bottom pot set over medium heat. When butter is melted add onion, garlic, and leeks. Cook until leeks are wilted and onions are translucent.
  2. Add diced celery root, cook for 2 minutes then add salt, cayenne and white peppers, thyme, and bay leaf.
  3. Stir in chicken broth and bring to a boil. Reduce to a simmer and cook until celery root is tender, about 8 minutes. Add cream and stir until combined.
  4. Discard bay leaf. Remove soup from heat and use a stick or stand blender to blend soup until smooth with no lumps.
  5. Place soup over low heat. Taste and adjust seasoning with salt and white pepper to your liking. Serve with crusty bread or rolls if desired.
