Creamed Kale

Serves 8

Ingredients

  • 2 tbsp Extra virgin olive oil
  • 2 tbsp Fresh shallot, minced
  • 1 tbsp Fresh garlic clove, minced
  • 8 cups Kale, chopped
  • 1/4 cup Sherry vinegar
  • 1/2 cup Heavy whipping cream
  • 8 oz Cream cheese
  • 1 cup Grated Parmesan cheese, divided use
  • 1 Large eggs, slightly beaten

Instructions

  1. Preheat oven to 350°F.
  2. Heat oil in a large sauté pan over medium low heat.
  3. Add in shallots and garlic and cook for several minutes until shallots are translucent and very fragrant.
  4. Add in chopped kale and toss carefully. You may have to add this in two batches.
  5. Add sherry vinegar. Cover pan and allow kale to wilt, tossing occasionally.
  6. Meanwhile, in a separate sauce pan, combine heavy cream, cream cheese, and half of the Parmesan cheese and heat gently over medium-low heat, stirring occasionally.
  7. In a separate bowl, beat egg. Using a ladle, pour a small amount of hot heavy cream mixture into beaten egg while mixing.
  8. Return tempered egg mixture back into remaining heavy cream. Stir to combine.
  9. Remove heavy cream mixture from heat, as well as chopped kale. Combine cream with kale, stir to combine, then transfer to a greased baking dish.
  10. Top with remaining cheese and bake for 30 minutes. Remove from oven and cool slightly before serving.
