Crab and Shrimp Stuffed Mushrooms

Ingredients

  • 20 Mushrooms
  • 1/2 cup Low fat cream cheese
  • 1/2 cup Non-fat plain Greek yogurt
  • 1 Fresh garlic clove, minced
  • 1 tbsp Fresh lemon zest
  • 1 tbsp Fresh lemon juice
  • 3 tbsp Green onion
  • 4 oz Cooked, peeled and deveined extra small shrimp
  • 4 oz Jumbo lump crab meat
  • 1/4 cup Parmesan cheese

Instructions

  1. Remove stems and any excess dirt from mushroom caps with a damp cloth. In a medium bowl combine cream cheese, yogurt, garlic, lemon zest and juice, and green onion together with a hand mixer. Whip on medium speed until smooth.
  2. Carefully fold in shrimp and crab.
  3. Preheat oven to 400ºF. Place mushrooms onto a foil lined baking sheet and spoon seafood mixture into the mushrooms. Sprinkle with Parmesan cheese and bake for 20 to 30 minutes. Let caps sit 5 minutes before serving.
