Cowboy Potatoes

Ingredients

  • 1/2 cup Parmesan cheese, finely grated
  • 1/3 cup Green onion(s), finely chopped
  • 1 1/2 cups Half and half
  • 32 oz Easy melt queso cheese, cubed
  • 1/3 cup Fresh cilantro, leaves only, finely chopped
  • 5 lb Gold potatoes, sliced about 1/8" thick

Instructions

  1. Preheat oven to 350ºF.
  2. Layer potatoes with overlapping edges on bottom of a 9" X 13" pan. Scatter a handful of cubes of cheese, green onions and cilantro over first layer of potatoes.
  3. Add another layer of potatoes and repeat layering process 3 more times, or to top edge of pan ending with cubes of cheese.
  4. Pour half and half evenly over potatoes and top with Parmesan cheese and remaining onions and cilantro.
  5. Cover and bake for 50 minutes. Uncover and bake 10 more minutes, just to brown cheese.
