Cowboy Chimichurri

Ingredients

  • 1 cup Curly leaf parsley, chopped fine
  • 1 cup Fresh cilantro, chopped fine
  • 1 tbsp Fresh oregano, chopped fine
  • 1 cup Tomatillo(s), diced into small cubes or brunoised
  • 1/2 cup Red bell pepper, small diced
  • 1 Medium jalapeño pepper, minced, approximately 2 tbsp plus more as needed
  • 3 Peeled Garlic Cloves, minced fine, approximately 1 tbsp
  • 1/4 cup Shallot, minced fine
  • 1/4 cup Red wine vinegar
  • 1 tsp Smoked paprika
  • 1/2 tsp Ground cumin
  • 1 cup Extra virgin olive oil

Instructions

  1. Combine parsley, cilantro, oregano, tomatillos, red bell peppers, jalapeños, garlic, shallots, red wine vinegar, smoked paprika and cumin together in a bowl.
  2. Whisk in olive oil to combine and season to taste. Refrigerate for up to 30 minutes to allow flavors to set up.
  3. Chef's Note: This chimichurri can be made a few days ahead and kept refrigerated.
