Cowboy Chimichurri

Ingredients
- 1 cup Curly leaf parsley, chopped fine
- 1 cup Fresh cilantro, chopped fine
- 1 tbsp Fresh oregano, chopped fine
- 1 cup Tomatillo(s), diced into small cubes or brunoised
- 1/2 cup Red bell pepper, small diced
- 1 Medium jalapeño pepper, minced, approximately 2 tbsp plus more as needed
- 3 Peeled Garlic Cloves, minced fine, approximately 1 tbsp
- 1/4 cup Shallot, minced fine
- 1/4 cup Red wine vinegar
- 1 tsp Smoked paprika
- 1/2 tsp Ground cumin
- 1 cup Extra virgin olive oil
Instructions
- Combine parsley, cilantro, oregano, tomatillos, red bell peppers, jalapeños, garlic, shallots, red wine vinegar, smoked paprika and cumin together in a bowl.
- Whisk in olive oil to combine and season to taste. Refrigerate for up to 30 minutes to allow flavors to set up.
- Chef's Note: This chimichurri can be made a few days ahead and kept refrigerated.
