  • 6 oz Yellow cornbread mix
  • 1/2 cup Shredded cheddar cheese

Instructions

  1. Heat oven to 425°F.
  2. Spray a 2 quart baking dish with nonstick cooking spray.
  3. Evenly spread shredded pork in prepared baking dish and set aside.
  4. Combine egg, milk and corn in a medium-size bowl.
  5. Add cornbread mix and stir well to combine.
  6. Evenly spread cornbread mixture over shredded pork and add cheese to the top of the pork.
  7. Bake for 20-25 minutes or until golden brown.
  8. Remove from oven and let sit for 5 minutes.
  9. Cut and serve with a spatula.
