Corn Chowder Made with Non-dairy Creamer

Serves 4
Ingredients
- 12 oz Baby Red Potatoes, quartered
- 2 tbsp Extra Virgin Olive Oil
- 7 oz Diced Celery and Onion
- 2 Medium fresh Garlic Clove, minced
- 7 oz 3 Color Bell Peppers
- 1 tbsp Jalapeño Pepper, minced
- 12 oz Frozen Corn
- 1 tbsp Kosher Salt
- 1/4 tsp Ground Black Pepper
- 2 cups Almond and Coconut Creamer
- 2 tbsp Green Onion, thinly sliced
Instructions
- Place potatoes in a medium pot and cover with water. Place on high heat and bring to a boil and cook until tender, about 4 to 5 minutes. Drain and reserve.
- Place a large pot over medium heat and add olive oil, once hot add celery & onion mixture and garlic. Cook 2 to 3 minutes then add in bell peppers and jalapeños. Cook for 1 more minute.
- Add in frozen corn and stir to combine, cook 2 to 3 minutes. Season with salt and pepper and add in reserved potatoes and creamer. Stir gently and reduce heat to low. Cook 3 to 4 minutes until heated through.
- Garnish with green onions and serve immediately.
