Coq Au Vin, Passport France

Ingredients

  • 1 fl oz Grapeseed oil
  • 1 1/2 lb Chicken thighs, season with salt and pepper
  • 1 1/2 lb Chicken legs, season with salt and pepper
  • 1/2 lb Bacon, cut into lardons
  • 1 cup Onions, small dice
  • 1/2 cup Celery, small dice
  • 1/2 cup Carrots, small dice
  • 1/2 lb Mushrooms, quaerted
  • 9 3/4 fl oz Fischer and Wieser Red Wine Pan Sauce
  • 1 cup Chicken broth, unsalted
  • 2 oz Butter

Instructions

  1. Heat a large rondeau or Dutch Oven on high heat and add grapeseed oil.
  2. Working in batches as needed, place seasoned chicken legs and thighs in the pot and sear until skin is lightly browned, about 6 minutes. Remove chicken from pot and set aside in a bowl to rest.
  3. Once all the chicken has browned, add bacon to the same pot and cook until crispy. Remove the bacon and place with the Chicken.
  4. Place onions, celery and carrots in the same pot and sweat until onions are translucent, about 2 minutes. Return chicken and bacon to the pot.
  5. Add mushrooms, red wine pan sauce and chicken broth, bring to a boil and reduce heat to simmer gently. Cover and simmer for 25 to 30 minutes until chicken is cooked and falling off the bone. Stir in butter and serve.
