Ingredients
- 1 fl oz Grapeseed oil
- 1 1/2 lb Chicken thighs, season with salt and pepper
- 1 1/2 lb Chicken legs, season with salt and pepper
- 1/2 lb Bacon, cut into lardons
- 1 cup Onions, small dice
- 1/2 cup Celery, small dice
- 1/2 cup Carrots, small dice
- 1/2 lb Mushrooms, quaerted
- 9 3/4 fl oz Fischer and Wieser Red Wine Pan Sauce
- 1 cup Chicken broth, unsalted
- 2 oz Butter
Instructions
- Heat a large rondeau or Dutch Oven on high heat and add grapeseed oil.
- Working in batches as needed, place seasoned chicken legs and thighs in the pot and sear until skin is lightly browned, about 6 minutes. Remove chicken from pot and set aside in a bowl to rest.
- Once all the chicken has browned, add bacon to the same pot and cook until crispy. Remove the bacon and place with the Chicken.
- Place onions, celery and carrots in the same pot and sweat until onions are translucent, about 2 minutes. Return chicken and bacon to the pot.
- Add mushrooms, red wine pan sauce and chicken broth, bring to a boil and reduce heat to simmer gently. Cover and simmer for 25 to 30 minutes until chicken is cooked and falling off the bone. Stir in butter and serve.
