Cola BBQ Sauce with Pepitas

Ingredients
- 2 tbsp Extra virgin olive oil
- 2 Medium White onion, diced
- 6 Peeled garlic cloves, minced
- 2 cans Cane sugar cola
- 2 cups Apple cider vinegar
- 2 tbsp Tomato paste
- 2 tbsp Worcestershire sauce
- 1/2 cup Honey
- 2 tbsp Spicy brown mustard
- 1 can Chipotle peppers
- 1/2 cup Roasted salted pepitas
- 1 tbsp Soy sauce
Instructions
- In a heavy bottom pot set over medium heat add olive oil, onions and garlic. Cook until onions and garlic just start to color. (6-8 min)
- Add in remaining ingredients starting with the cola and cider vinegar. Bring sauce to a boil then reduce heat to a simmer. Cook for 30-35 minutes or until sauce just starts to thicken.
- Using an immersion blender puree sauce in the pan until sauce is smooth. Continue to cook pureed sauce for 10 more minutes.
- Remove from heat and season to taste with extra salt and pepper if needed and refrigerate for up to 2 weeks.
