Coconut Shrimp Tacos with Jicama Salsa

Ingredients
- 1 lb Meal Simple Jumbo Coconut Shrimp
- 1 cup Fresh pineapple, small dice
- 1 cup Fresh jicama, small dice
- 1/3 cup Red onion, very finely diced
- 1 Medium serrano pepper, stemmed, seeded and very finely diced
- 1/3 cup Fresh cilantro, finely chopped
- 1 tbsp Fresh lime juice
- 8 H‑E‑B Street Taco White Corn Tortillas
Instructions
- Heat oven to 425ºF and cook shrimp according to package directions.
- While shrimp is cooking dice pineapple, jicama, onion, and serrano. Place in a medium-sized bowl. Chop cilantro and add to the bowl. Squeeze fresh lime over the top and salt lightly to taste. Mix gently and set aside.
- Heat a skillet over medium high heat. Spray tortillas lightly with spray oil and toast on each side, just until lightly browned. Keep tortillas warm while assembling tacos.
- Remove cooked shrimp from oven and divide shrimp evenly between toasted taco shells. Top with jicama salsa.
- Optional: Garnish with avocado slices and crema if desired.
