Unsaved Classic Southern Fried Pickles

Ingredients

  • 3 cups Peanut oil, plus more as needed for frying
  • 1 Dill pickle chips
  • 2 cups Low fat cultured 1% milkfat buttermilk, plus more as needed for dredging
  • 2 cups Cornmeal, plus more as needed for dredging

Instructions

  1. Set a large Dutch oven over medium heat, add oil and bring to approximately 325ºF to 350ºF.
  2. While oil heats, drain pickles in a strainer, rise well and pat dry on paper towels.
  3. Set up a frying station by placing buttermilk and cornmeal in separate shallow dishes. Add dry pickles to buttermilk, dredge in cornmeal, then shake off any excess.
  4. Fry pickles in batches (be careful not to overcrowd pot) until golden brown and crispy.
  5. Remove pickles with a slotted spoon and drain on a rack with paper towels underneath to catch excess oil. Season with salt and pepper if desired.
  6. Dip into your favorite blue cheese or ranch dressing.
