Classic Hollandaise Sauce

Ingredients
- 12 oz Unsalted butter
- 3 Large eggs, separate and reserve yolks
- 1 Lemon, juiced
- 1/2 tbsp Water, plus more for water bath
- 1/4 tsp Ground cayenne pepper
Instructions
- Place butter in a small saucepan over medium heat until melted. Using a small ladle, skim foam from surface. Reserve clarified butter and milk solid foam.
- Start a water bath in a medium saucepan and bring to a simmer.
- Place egg yolks, lemon juice, water and cayenne in a medium mixing bowl. Whisk vigorously until a froth forms.
- Place bowl with egg mixture over simmering water and whisk vigorously, carefully rotating bowl and scraping sides regularly to avoid scrambling yolks.
- When ribbon stage is reached (mixture has thickened to the point where ribbons are visible in bottom of the bowl), remove from water bath and stabilize with a wet towel.
- Whisking vigorously, slowly drizzle in clarified butter, adding milk solid foam to thin the sauce as necessary, until all the butter has been used and sauce coats the back of a spoon.
- Place in a warm place until ready to serve. Season with salt as needed.
