Serves 4

Ingredients

  • 12 oz Unsalted butter
  • 3 Large eggs, separate and reserve yolks
  • 1 Lemon, juiced
  • 1/2 tbsp Water, plus more for water bath
  • 1/4 tsp Ground cayenne pepper

Instructions

  1. Place butter in a small saucepan over medium heat until melted. Using a small ladle, skim foam from surface. Reserve clarified butter and milk solid foam.
  2. Start a water bath in a medium saucepan and bring to a simmer.
  3. Place egg yolks, lemon juice, water and cayenne in a medium mixing bowl. Whisk vigorously until a froth forms.
  4. Place bowl with egg mixture over simmering water and whisk vigorously, carefully rotating bowl and scraping sides regularly to avoid scrambling yolks.
  5. When ribbon stage is reached (mixture has thickened to the point where ribbons are visible in bottom of the bowl), remove from water bath and stabilize with a wet towel.
  6. Whisking vigorously, slowly drizzle in clarified butter, adding milk solid foam to thin the sauce as necessary, until all the butter has been used and sauce coats the back of a spoon.
  7. Place in a warm place until ready to serve. Season with salt as needed.
