Classic Holiday Gravy

Serves 8
Ingredients
- 2 oz Unsalted Butter
- 1 tsp Peeled Garlic Cloves, minced fine
- 1/4 cup Fresh Diced Savory Vegetables
- 1 tsp Thyme, leaves only roughly chopped
- 1/4 cup Unbleached All Purpose Flour
- 2 1/2 cups Chicken stock, add less or more as desired for consistency
Instructions
- Place a medium sized sauce-pot over medium heat.
- Add butter and allow to melt before adding garlic, vegetable mix and chopped thyme saute for 3 to 4 minutes or until veggies are just translucent but do not brown.
- Add flour and stir flour into veggies and allow flour to cook for 5 to 10 minutes or until it just darkens slightly before adding in stock approximately a cup at a time whisking vigorously each time.
- Continue to whisk until gravy thickens, approximately 8 to 15 minutes. Season to taste with cracked black pepper and salt to taste. Keep warm for serving.
- Chef's Note: To customize gravy, beef drippings or rendered turkey fat can be added in place of butter to add favor as well as any collected pan juices can be added to stock to add more flavor.
- Additional Chef's Note: The longer gravy cooks on stove the thicker it will become, if it accidentally get too thin simply allow it to cook longer and reduce.
