Ingredients

  • 1/4 cup Shallot, finely chopped
  • 1/3 cup Brandy
  • 1/2 tsp White pepper
  • 3 cups Chicken stock
  • 3 cups Beef stock
  • 2 cups Heavy whipping cream
  • 3 tbsp Corn starch
  • 1 tbsp Green peppercorns, roughly chopped

Instructions

  1. Melt butter in a saucepan over medium-high heat.
  2. Add shallots and sauté until they start to turn translucent but not brown.
  3. Stir in brandy and let simmer and reduce until nearly gone, about 2 to 3 minutes.
  4. Add white pepper, chicken stock, beef stock and cream. Simmer and stir frequently until sauce is reduced by half, about 30 to 40 minutes.
  5. Dissolve cornstarch in 2 tablespoons of water. Whisk into simmering sauce until desired consistency (more or less cornstarch may be needed depending on preferred thickness).
  6. Add peppercorns, stir and heat through another 5 minutes. Adjust flavor with salt and pepper as needed.
  7. Serve with whole roasted steak au poivre or seared steaks.
