Unsaved Classic Chicken Tortilla Soup with Black Beans and Corn

Ingredients

  • 32 oz Tortilla soup
  • 2 cups Chicken broth
  • 12 oz Fully cooked chicken fajita strips, thawed
  • 1 tbsp Chili powder
  • 2 cups Frozen super sweet corn, frozen or fresh
  • 15.5 oz Black beans, drained and rinsed
  • 14.5 oz Diced, fire roasted tomatoes with garlic

Instructions

  1. Combine tortilla soup, chicken broth, chicken, chili powder, corn, beans and fire roasted tomatoes and chiles with garlic in a large pot over medium heat. Bring to a boil and simmer 10 minutes.
  2. Serve soup topped with tortilla chips, avocado, lime wedges, cilantro, and cheese.
  3. Chef's Note: This recipe works well in a slow cooker, simply place all ingredients in pot and cook on low 8 hours.
