Classic Chicken Salad with Dried Cherries

Ingredients
- 1 lb Extra Thin Sliced Chicken Breasts
- 1/2 tsp Kosher salt, plus more as needed
- 1/2 tsp Ground black pepper
- 1 tsp Ground coriander
- 1 tbsp Extra virgin olive oil
- 1 cup Mayonnaise, plus more as needed for creaminess
- 1/3 cup Red onions, minced
- 1/2 cup Celery stalks, minced
- 1 cup Dried cherries, roughly chopped
- 1/4 cup Fresh Italian parsley, finely chopped
- 1 1/2 tbsp Lemons, juiced
Instructions
- Season breasts with salt, pepper and coriander. Add olive oil to a non-stick pan and allow to heat 1 to 2 minutes.
- Sear breasts 1 to 3 minutes per side until cooked. Set aside to cool, then chop into smaller pieces.
- In a bowl, combine mayonnaise, onions, celery, cherries, parsley, and lemon juice. Mix well and add chicken. Season to taste as needed.
- Refrigerate 20 minutes or overnight. This salad can be made a day in advance. Serve salad on favorite bread as a sandwich or on a bead of iceberg lettuce.
