Citrus Spinach & Chicken Salad

Ingredients

  • 1 tbsp Olive oil
  • 2 Ruby red grapefruits, peeled and sectioned
  • 1 Large avocado, peeled and sliced
  • 5 oz Baby spinach
  • 2 Red onions, sliced
  • 4 Fully cooked grilled chicken breasts, cooked to package instructions and sliced

Instructions

  1. Combine olive oil, grapefruit and avocado in a large salad bowl, and toss gently to coat.
  2. Top grapefruit mixture with spinach, onions and chicken.
  3. Cover salad with plastic wrap and chill 30 minutes or more.
