Citrus Marinated Pork Tenderloin

Ingredients
- 1 lb Pork tenderloin
- 1 cup Fresh squeezed orange juice
- 1/2 cup Fresh squeezed lime juice
- 5 Garlic cloves, sliced thinly
- 1 Medium fresh shallot, diced
- 1/2 cup Soy sauce
- 1 tsp Crushed red pepper
- 1 tbsp Fresh ginger root, minced
Instructions
- Preheat grill to 350°F or medium high heat.
- In a large gallon plastic bag place pork tenderloin in with orange juice, lime juice, garlic, shallots, soy sauce, crushed red pepper flakes, and minced ginger. Seal bag tightly and move it around slightly to coat the pork. Refrigerate overnight or for at least 8 hours.
- Once marinated, remove pork from marinade and pour remaining marinade mixture into a small pot. Bring to a boil and reduce liquid by half. Set aside to pour over pork. (*For best grilling results allow pork to sit at room temperature for 20-30 minutes before cooking.)
- Grill pork for 6-8 minutes per side or until internal temperature reaches 145°F. Remove from grill, let sit for 15 minutes then slice. Drizzle with reduced marinade and serve.
