  • 1 cup Coarse kosher salt
  • 1/2 cup Granulated sugar
  • 2 Large Fresh navel oranges, peel only
  • 4 Star anise
  • 1 tbsp Whole black peppercorns
  • 2 Bay leaves

Instructions

  1. Fill a pot with a half gallon of water then add salt, sugar, orange peel, star anise pods, peppercorns and bay leaves.
  2. Bring water to a simmer over medium heat just long enough to dissolve salt and sugar. Remove from heat and allow to cool.
  3. Add remaining water to a large brining bucket, pour in brine, stir and refrigerate until cold.
  4. Once brine is cool, add duck or any protein desired, place in refrigerator and let sit submerged in brine for at least 8 hours or as long as 24 hours.
