  • 1/4 Red bell pepper, cut into thin strips
  • 1/2 Yellow squash, shredded
  • 1 cup Sweet tomatoes, halved

Instructions

  1. To make orange salad dressing, mix orange juice and olive oil.
  2. Combine thin-sliced avocado and tablespoon of dressing in a small bowl.
  3. Mash the avocados using a potato masher or fork.
  4. Spread 2 tablespoons of mashed avocado mixture on each tortilla, leaving 1 inch along the rim.
  5. Layer 3 to 4 thin slices of chicken in the center of each tortilla and top each with 1/4 cup spinach leaves, 4 strips of bell pepper, 1 tablespoon shredded squash, 2 tablespoons tomatoes.
  6. Gently roll salad wrap, then wrap in a square sheet of plastic wrap.
  7. Chill until ready to serve; to serve, cut the wrap in half diagonally and remove the plastic wrap.
