Citrus Cedar Plank Salmon

Ingredients
- 1 Grapefruit, juiced and zested
- 1 Lemon, juiced and zested
- 1 Lime, juiced and zested
- 2 tbsp Apricot preserves
- 2 Garlic cloves, minced
- 2 tbsp Lite soy sauce
- 1 tbsp Corn starch
- 1 tbsp Water
- 24 oz Raw salmon fillet
- 1/4 tsp Kosher salt
- 1 tsp Ground black pepper
Instructions
- Soak cedar planks 30 minutes in water. Preheat grill to medium-high.
- Meanwhile, in a medium saucepan whisk together citrus juices and zests, apricot preserves, garlic and soy sauce.
- In a small bowl, whisk together cornstarch and water. Slowly stir into marinade and bring to a boil over medium-high heat until mixture starts to thicken. Remove from heat.
- Lay salmon skin side down on cedar planks (or well oiled grill) and season with salt and pepper. Brush half of marinade onto tops of salmon and grill 12 - 15 minutes.
- Transfer salmon to plates and brush with reserved marinade on top.
