Citrus Beurre Blanc

Serves 4

Ingredients

  • 1 Medium Lemon, zest and juice reserved
  • 1 Medium Orange, zest and juice reserved
  • 1 tbsp Fresh basil, finely chopped
  • 2 cups White wine
  • 1 Small Bay leaf
  • 1 Medium Lime, zest and juice reserved
  • 12 tbsp Salted butter
  • 3/4 cup Shallots, diced very fine

Instructions

  1. Add shallots, wine and citrus juice and zest and bay leaf to a sauce pan. Bring to a simmer over medium heat.
  2. Simmer for 10 to 15 minutes, or until almost all liquid is gone. Reduce heat to low and whisk in butter a little at a time until fully incorporated.
  3. Add fresh basil and adjust flavor with salt and pepper as needed.
  4. Chef's Note: Traditional beurre blanc has all the solids removed, this sauce can be strained to make it smooth or served as is.
