Cilantro Lime Chicken

Ingredients

  • 2 1/2 tbsp Limes, juiced
  • 1 1/2 tbsp Olive oil
  • 24 oz Natural boneless, skinless chicken breasts, cut into 6 ounce portions
  • 1/4 tsp Kosher salt
  • 1 Vegetable oil no-stick cooking spray
  • 1 Haas avocado, diced
  • 1 Jalapeño pepper, diced
  • 2 tbsp Fresh cilantro, minced
  • 2 cups Mild chunky salsa

Instructions

  1. Combine lime juice and olive oil in a large bowl. Coat chicken in mixture and let stand 3 minutes. Remove chicken and discard marinade.
  2. Sprinkle chicken evenly with salt.
  3. Place a grill pan over medium-high heat. Coat pan with cooking spray and cook chicken 6 minutes on each side or until done.
  4. Top chicken with avocado, jalapeño, cilantro and salsa.
