Cilantro Lime Carnitas

Ingredients
- 5 lb Bone in pork butt picnic roast, approximately 4 to 5 lbs.
- 1 cup Fresh cilantro, chopped
- 2 Limes, ends trimmed and limes thinly sliced, plus more as needed for garnishing
- 1 cup Vegetable stock
- 1/2 cup White onions, diced, as needed for garnish
Instructions
- Preheat oven to 300ºF. Place pork butt in a roasting pan and season liberally with salt and pepper on all sides or as desired.
- Arrange cilantro and lime slices on top of pork then add veggie stock to the pan.
- Cover pan with foil and roast for 4 to 6 hours or until bone pulls out clean or pork is shred-tender.
- Discard lime slices and shred pork in pan to incorporate all pan juices.
- Season to taste and serve on tortillas with diced onion and a squeeze of lime juice as needed.
- Chef's Note: If desired crisp up pork in a non-stick skillet before serving to add extra crispy texture to tacos.
