Chorizo Con Queso

Ingredients

  • 2 Fresh chorizo, uncooked
  • 1 cup White onion, chopped
  • 8 oz Mushrooms stems and pieces, drained & chopped
  • 10 oz Diced tomatoes with green chiles
  • 2 lb Easy Melt Cheese, cubed

Instructions

  1. Cook chorizo in a large skillet over medium-high heat (about 4-5 minutes); drain all fat from skillet.
  2. Using the same skillet, add onion and cook for 2 minutes until onion is tender.
  3. Add mushrooms, tomatoes with green chilies and cheese.
  4. Reduce heat to medium and cook until cheese is melted, stirring frequently.
  5. Dip can also be heated in microwave oven in a microwave-safe dish on high power for 3 minutes or until smooth.
