Unsaved Chorizo & Avocado Breakfast Tostadas

Ingredients

  • 8 Casera Yellow Tostadas, as needed
  • 1/4 cup Fresh lemon, juiced
  • 1 Large garlic clove, zested or finely miced
  • 2 Large avocado, plus more as needed
  • 12 oz Pork chorizo, crumbled
  • 1 cup Queso fresco, as needed to garnish
  • 2 cups Shredded lettuce, as needed

Instructions

  1. Place a non-stick pan over medium heat. Add chorizo and cook until just crispy and fully cooked.
  2. Drain off all excess rendered fat and set chorizo aside. In a bowl roughly mash avocado with garlic and lemon juice. Season avocado mixture to taste.
  3. Build tostadas by spreading a little avocado mixture on each tostada, sprinkle on shredded lettuce then top each with crumbled chorizo, and queso fresco.
  4. Repeat process with each additional tostada. Drizzle with your favorite salsa or condiments.
  5. Chef's Note: You can also add a fried egg to top each tostada.
