Unsaved Chocolate Chip Pancakes made with Gluten Free Baking Mix

Ingredients

  • 15 oz Gluten Free All Purpose Baking Mix
  • 2 cups Unsweetened Almond Milk
  • 2 Large Eggs
  • 4 tbsp Coconut Oil, melted, plus more for cooking
  • 1 tbsp Vanilla Extract
  • 1/2 cup Bitter-Sweet Chocolate Mini Baking Chips

Instructions

  1. Combine gluten free baking mix, almond milk, egg, melted coconut oil, and vanilla together in a medium sized bowl.
  2. Melt a teaspoon of coconut oil in a large non-stick skillet over medium flame.
  3. Using a measuring cup, pour 1/4 cup of batter into preheated pan. Top with chocolate chips, then cook until bubbles form and edges appear dry. Flip and continue to cook for 1 minute more.
  4. Continue until all the batter is cooked.
