  • 1/2 cup Coconut Oil
  • 3 Large Eggs
  • 2 tsp Vanilla Extract

Instructions

  1. Preheat oven to 350˚F.
  2. Line a standard muffin tin with baking cups.
  3. Combine cake mix, almond milk, oil, eggs and vanilla in a bowl with an electric mixer according to package directions. Then add in the chocolate chips.
  4. Fill cups 3/4 of the way with batter, then bake for 25 to 30 minutes or until a toothpick inserted in the center comes out clean.
  5. Let cool 5 minutes before eating. Extra muffins can be stored in a resealable container.
