Chocolate Chip Muffins made with Gluten Free Baking Mix

Ingredients
- 22 oz Gluten Free Yellow Cake Mix
- 2/3 cup Almond Milk
- 1/2 cup Coconut Oil
- 3 Large Eggs
- 2 tsp Vanilla Extract
- 1 cup Bitter-Sweet Chocolate Mini Baking Chips
Instructions
- Preheat oven to 350˚F.
- Line a standard muffin tin with baking cups.
- Combine cake mix, almond milk, oil, eggs and vanilla in a bowl with an electric mixer according to package directions. Then add in the chocolate chips.
- Fill cups 3/4 of the way with batter, then bake for 25 to 30 minutes or until a toothpick inserted in the center comes out clean.
- Let cool 5 minutes before eating. Extra muffins can be stored in a resealable container.
