Chipotle Roasted Cauliflower & Sweet Potatoes

Ingredients

  • 1 Large head of cauliflower, cut into small florets or bite-sized pieces
  • 2 Large sweet potato, peeled and diced small or into bite-sized pieces
  • 1/4 cup Extra virgin olive oil
  • 1 tsp Chipotle chili powder, plus more as needed to taste
  • 1 tsp The Spice Hunter Global Fusion Smoky Chile Rub, plus more as needed to taste
  • 1/3 cup Green onion, diced small

Instructions

  1. Preheat oven to 425ºF.
  2. In a large bowl combine cauliflower and sweet potatoes. Toss with olive oil, a pinch salt,and pepper, chipotle chili powder and smoky chile rub until thoroughly coated.
  3. Spread out on a sheet pan and roast for 25 to 30 minutes or until nicely browned and caramelized.
  4. Remove to a serving dish and season to taste as needed. Garnish with fresh scallions.
