Chipotle Roasted Cauliflower

Ingredients

  • 11 oz Chipotle mayonnaise
  • 1/4 cup Parmesan cheese, finely grated
  • 1/4 cup Italian blend grated cheese
  • 1 Large whole head of cauliflower
  • 1/4 cup Green onion, very thinly sliced

Instructions

  1. Preheat oven to 375ºF. In a small bowl mix together chipotle mayonnaise, and both types of cheese. Set aside.
  2. Wash cauliflower well and remove any leaves at the base. Cut cauliflower into 8 equal-sized wedges and lay out in a single layer on a baking sheet.
  3. Cover top and sides of each wedge with an even layer of mayonnaise mixture.
  4. Roast cauliflower for 18 to 22 minutes or until stem part of cauliflower is tender when pierced with a fork.
  5. Remove from oven and garnish with green onions.
