Chipotle Roasted Cauliflower

Ingredients
- 11 oz Chipotle mayonnaise
- 1/4 cup Parmesan cheese, finely grated
- 1/4 cup Italian blend grated cheese
- 1 Large whole head of cauliflower
- 1/4 cup Green onion, very thinly sliced
Instructions
- Preheat oven to 375ºF. In a small bowl mix together chipotle mayonnaise, and both types of cheese. Set aside.
- Wash cauliflower well and remove any leaves at the base. Cut cauliflower into 8 equal-sized wedges and lay out in a single layer on a baking sheet.
- Cover top and sides of each wedge with an even layer of mayonnaise mixture.
- Roast cauliflower for 18 to 22 minutes or until stem part of cauliflower is tender when pierced with a fork.
- Remove from oven and garnish with green onions.
