
Chipotle Ranch Burrito Bowl

Serves 4
Ingredients
- 1 tbsp Avocado oil
- 1 Medium sweet potato, peeled and diced
- 1 lb 93% Lean Ground Beef
- 3/4 cup Chipotle Ranch Dressing
- 16 oz Frozen fajita vegetables blend
- 2 cups Brown rice, cooked
- 4 cups Romaine lettuce, shredded
- 12 oz Medium Pico de Gallo
Instructions
- Heat oil in a large skillet over medium-high heat. Add in sweet potatoes and cook for 3 to 4 minutes until they begin to brown, add in ground beef. Cook continually until beef is browned, then add in 1/2 cup of dressing. Bring to a low simmer then remove from pan.
- In the same pan, add frozen fajita blend and cook for 3 to 4 minutes until no longer frozen and they begin to brown. Add in the remaining dressing, bring to low simmer then remove from heat.
- To build bowls, place cooked rice on bottom of a bowl or container, then top with beef mixture and peppers. Top with lettuce and pico. Enjoy.
- Chef's Notes: This is great for make ahead meal prep.
