Quick & easy:Chipotle Marinated Tofu Kebabs

Ingredients

  • 8 oz Firm tofu, water drained and tofu squeezed dry
  • 4 Vegetable skewer kabobs
  • 4 tbsp Chipotle Greek yogurt dip, brushed evenly over each kabob

Instructions

  1. Preheat grill to medium-high, 350ºF to 375ºF. While grill heats, cut tofu into 8 large cubes to fit evenly on skewers. Remove a few veggies from each skewer and add 2 tofu cubes to each.
  2. Brush each kabob with a tablespoon of chipotle yogurt dip. Place on hot grill for 15 to 20 minutes, rotating kabobs to cook evenly.
  3. Once veggies and tofu are nicely grilled, remove to a plate to cool slightly. Brush kebabs with more chipotle yogurt if desired and serve.
