Chipotle Caesar Dressing

Ingredients

  • 3.7 oz Chipotle peppers in adobo, 1 mini can
  • 1/4 cup Limes, juice
  • 1 tbsp Worcestershire Sauce
  • 4 Garlic cloves, crushed
  • 1/4 cup Fresh cilantro, leaves tightly packed
  • 1 tbsp Dijon mustard
  • 2 tbsp Water
  • 1 1/4 cups Extra virgin olive oil

Instructions

  1. In a blender combine chipotles, lime juice, Worcestershire sauce, garlic, cilantro, mustard and water.
  2. Puree until smooth. With blender still running, slowly add oil in a thin stream until dressing is thick and emulsified.
  3. Season to taste as needed and refrigerate for at least 30 minutes to allow flavors to meld. Store refrigerated for up to a week.
