Chipotle Adobo Pork Chops

Unsaved Chipotle Adobo Pork Chops

Ingredients

  • 7 oz Chipotle peppers in adobo sauce
  • 2 Garlic cloves, peeled
  • 1/2 cup White onions, coarsely chopped
  • 1 Lime, juiced and zested
  • 4 Boneless pork chops, 3/4-inch thick
  • 1/2 tsp Kosher salt
  • 1 tsp Ground black pepper
  • 1 1/2 tsp Canola oil
  • 4 oz Mango pico de gallo

Instructions

  1. Place 2 chipotle peppers and sauce, garlic, onions, lime juice, and zest in a blender. Purée until smooth.
  2. Season pork chops with salt and pepper, and rub puréed chipotle adobo sauce on both sides.
  3. Add canola oil to a grill pan (or a regular pan) set over medium-high heat. Cook pork about 3 minutes on each side.
  4. Serve with mango pico de gallo.
