Chipotle Adobo Pork Chops

Ingredients
- 7 oz Chipotle peppers in adobo sauce
- 2 Garlic cloves, peeled
- 1/2 cup White onions, coarsely chopped
- 1 Lime, juiced and zested
- 4 Boneless pork chops, 3/4-inch thick
- 1/2 tsp Kosher salt
- 1 tsp Ground black pepper
- 1 1/2 tsp Canola oil
- 4 oz Mango pico de gallo
Instructions
- Place 2 chipotle peppers and sauce, garlic, onions, lime juice, and zest in a blender. Purée until smooth.
- Season pork chops with salt and pepper, and rub puréed chipotle adobo sauce on both sides.
- Add canola oil to a grill pan (or a regular pan) set over medium-high heat. Cook pork about 3 minutes on each side.
- Serve with mango pico de gallo.
