Chickpea Curry with Atry Smoked Basmati Rice

Ingredients
- 2 cups Smoked basmati rice
- 2 tbsp Hill Country Fare Canola Oil
- 1 Cinnamon stick
- 2 Garlic clove, minced
- 1 cup Yellow onions, chopped
- 1 tsp Fresh ginger root, grated
- 4 Garlic clove, minced
- 1/4 tsp Ground cumin
- 1/2 tsp Adams Reserve Ground Tumeric
- 1/4 tsp Hill Country Fare Ground Black Pepper
- 1 tsp Garam masala
- 14 oz Chopped tomatoes
- 14 oz Chickpeas, rinsed & drained
- 1/2 tbsp Fresh cilantro, chopped
Instructions
- Cook rice according to package directions. Cover and set aside.
- Heat oil in large skillet over medium. Add cinnamon stick and 2 minced garlic cloves. Cook until popping sound is heard.
- Add in onion, ginger and remaining minced garlic. Cook approximately 4 - 5 minutes or until onions are browned. Stirring frequently.
- Add in remaining spices. Stir to combine then add in tomatoes and chickpeas.
- Cook until tomatoes have reduced and thickened. Stir in cilantro and serve immediately.
