Chickpea Curry with Atry Smoked Basmati Rice

Serves 4

Ingredients

  • 2 cups Smoked basmati rice
  • 2 tbsp Hill Country Fare Canola Oil
  • 1 Cinnamon stick
  • 2 Garlic clove, minced
  • 1 cup Yellow onions, chopped
  • 1 tsp Fresh ginger root, grated
  • 4 Garlic clove, minced
  • 1/4 tsp Ground cumin
  • 1/2 tsp Adams Reserve Ground Tumeric
  • 1/4 tsp Hill Country Fare Ground Black Pepper
  • 1 tsp Garam masala
  • 14 oz Chopped tomatoes
  • 14 oz Chickpeas, rinsed & drained
  • 1/2 tbsp Fresh cilantro, chopped

Instructions

  1. Cook rice according to package directions. Cover and set aside.
  2. Heat oil in large skillet over medium. Add cinnamon stick and 2 minced garlic cloves. Cook until popping sound is heard.
  3. Add in onion, ginger and remaining minced garlic. Cook approximately 4 - 5 minutes or until onions are browned. Stirring frequently.
  4. Add in remaining spices. Stir to combine then add in tomatoes and chickpeas.
  5. Cook until tomatoes have reduced and thickened. Stir in cilantro and serve immediately.
