Unsaved Chicken Taco Broccoli Bake

Ingredients

  • 1 lb Boneless skinless chicken breasts
  • 2 cups Long grain white rice, prepared according to package instructions
  • 8 oz Neufchatel cream cheese
  • 2 tbsp Extra virgin olive oil
  • 2 tbsp Taco seasoning, divided use
  • 1/2 cup 2% milk
  • 2 cups Shredded cheddar cheese, divided use
  • 16 oz Frozen broccoli

Instructions

  1. Preheat oven to 375°F.
  2. Place rice in a large mixing bowl and set aside.
  3. Coat a 9 x 13 inch baking dish with non-stick spray and set aside.
  4. Heat a large pan on medium-high.
  5. Mix chicken, half of taco seasoning, and oil in a large bowl.
  6. Add chicken to hot pan and cook 5 minutes then transfer to the bowl with the rice.
  7. In the same bowl, add remaining taco seasoning, Neufchatel cheese, broccoli, 1 cup shredded cheese, and milk.
  8. Stir to combine and pour into prepared pan.
  9. Cover with remaining cheese and bake uncovered 45 minutes or until heated through.
