
Chicken Stir Fry with Fresh Vegetables & Sweet Ginger Sauce

Ingredients
- 2 tbsp Sesame oil, divided use
- 1 lb Chicken breast for stir fry
- 16 oz Stir fry vegetable medley
- 1 Medium white onion, sliced
- 2 cups Mushrooms, sliced
- 1 tbsp Garlic cloves, diced
- 1 tbsp Fresh ginger root, diced
- 1/2 cup Plum sauce
- 2 tbsp Less sodium soy sauce
- 1/8 tsp Kosher salt, to taste
- 1/8 tsp Ground black pepper, to taste
Instructions
- Bring a medium sauté pan to medium-high heat. Add 1 tablespoon sesame oil and chicken, sauté 6 to 7 minutes. Remove chicken and set aside.
- In the same pan add remaining oil, vegetables, garlic, and ginger. Sauté 4 to 5 minutes on medium-high heat.
- Add cooked chicken to pan and finish with plum sauce, soy sauce, and salt and pepper to taste.
