Chicken Stir Fry with Fresh Vegetables & Sweet Ginger Sauce

Serves 6

Ingredients

  • 1 tbsp Fresh ginger root, diced
  • 1/8 tsp Kosher salt, to taste
  • 2 tbsp Less sodium soy sauce
  • 2 cups Mushrooms, sliced
  • 2 tbsp Sesame oil, divided use
  • 1 Medium white onion, sliced
  • 1 tbsp Garlic cloves, diced
  • 1/8 tsp Ground black pepper, to taste
  • 1/2 cup Plum sauce
  • 1 lb Chicken breast for stir fry
  • 16 oz Stir fry vegetable medley

Instructions

  1. Bring a medium sauté pan to medium-high heat. Add 1 tablespoon sesame oil and chicken, sauté 6 to 7 minutes. Remove chicken and set aside.
  2. In the same pan add remaining oil, vegetables, garlic, and ginger. Sauté 4 to 5 minutes on medium-high heat.
  3. Add cooked chicken to pan and finish with plum sauce, soy sauce, and salt and pepper to taste.
