Chicken Scalloped Potato Casserole

Ingredients

  • 1 Fresh jalapeno pepper(s), seeded and chopped fine
  • 3/4 cup 2% milk
  • 2 tbsp Unsalted butter
  • 10 oz Chunk white chicken in water, drained and chopped
  • 10 oz Green beans, frozen
  • 5.2 oz Scalloped potatoes
  • 1 Vegetable oil no-stick cooking spray

Instructions

  1. Heat oven to 400°F.
  2. Spray a 2-quart baking dish with non-stick cooking spray.
  3. Combine 2 cups boiling water, butter and milk in a saucepan.
  4. Stir in cheese sauce mix, then add potatoes, chicken, green beans and jalapeno pepper; stir to combine.
  5. Pour potato mixture into prepared baking dish; bake uncovered for 35 minutes or until potatoes are tender.
