Chicken Salsa Quesadillas

Ingredients
- 12 Corn tortillas
- 1 Vegetable oil no-stick cooking spray
- 8 oz Shredded Monterey Jack with jalapenos cheese
- 8 oz Canned chicken
- 1 cup Medium salsa
Instructions
- Heat oven to 450°F.
- Line 2 baking sheets with foil, and spray with non-stick cooking spray.
- Combine chicken, 1/4 cup salsa and cheese in small bowl, and set aside.
- Place 3 tortillas on each sheet pan and spread 1/2 cup chicken mixture over each tortilla, then place tortillas on top.
- Spray each tortilla top with non-stick spray and bake 5 minutes.
- Remove from oven, turn quesadillas over and bake another 5 minutes until cheese is melted and tortillas are golden brown.
- Remove from baking sheet, cut into wedges and serve with remaining salsa.
