Chicken Salsa Quesadillas

Ingredients

  • 12 Corn tortillas
  • 1 Vegetable oil no-stick cooking spray
  • 8 oz Shredded Monterey Jack with jalapenos cheese
  • 8 oz Canned chicken
  • 1 cup Medium salsa

Instructions

  1. Heat oven to 450°F.
  2. Line 2 baking sheets with foil, and spray with non-stick cooking spray.
  3. Combine chicken, 1/4 cup salsa and cheese in small bowl, and set aside.
  4. Place 3 tortillas on each sheet pan and spread 1/2 cup chicken mixture over each tortilla, then place tortillas on top.
  5. Spray each tortilla top with non-stick spray and bake 5 minutes.
  6. Remove from oven, turn quesadillas over and bake another 5 minutes until cheese is melted and tortillas are golden brown.
  7. Remove from baking sheet, cut into wedges and serve with remaining salsa.
