Chicken Salad with Grapes & Apples

Ingredients
- 1 tsp Canola oil
- 1 lb Ground chicken breast 97% lean
- 1/4 cup Diced sweet onions, finely diced
- 1 cup Frozen chopped spinach, chopped
- 1 Celery stalks, chopped
- 2 cups Red seedless grapes, sliced in half
- 1 Medium Granny smith apples, chopped
- 1/3 cup Light mayonnaise
- 1/8 tsp Kosher salt
- 1/8 tsp Ground black pepper
- 8 Wheat sandwich thin rounds
Instructions
- Heat a heavy bottom skillet over medium high heat 3 minutes.
- Add oil and ground chicken.
- Cook 15 minutes or until internal temperature is 165°F.
- Set aside and let cool.
- Meanwhile, combine onion, spinach, celery, grapes, apple and mayonnaise in large serving bowl.
- Stir in cooked chicken and season with salt and pepper.
- Serve on a whole wheat bun.
