Chicken Fried Rice

Serves 4
Ingredients
- 1 tbsp Canola oil, divided
- 12 oz Boneless, skinless chicken breast, diced
- 1/4 tsp Ground ginger
- 2 cups Frozen peas and carrots
- 1/2 cup Green onions, chopped
- 2 Garlic cloves, minced
- 2 Large eggs, beaten
- 2 cups Long grain bown rice, cooked
- 2 tbsp Less sodium soy sauce
Instructions
- Place a large non-stick skillet over medium-high heat and 1/2 tablespoon oil.
- Season chicken with ginger and cook several minutes until cooked through then transfer to a plate.
- Add remaining oil to same pan as well as peas and carrots, green onions and garlic; sauté 2 minutes.
- Push veggies to side, add eggs and cook until slightly scrambled.
- Return chicken to pan along with cooked rice and soy sauce. Stir to combine and cook several minutes.
