  • 1/4 tsp Ground ginger
  • 2 cups Frozen peas and carrots
  • 1/2 cup Green onions, chopped

  • 2 Large eggs, beaten
  • 2 cups Long grain bown rice, cooked
  • 2 tbsp Less sodium soy sauce

Instructions

  1. Place a large non-stick skillet over medium-high heat and 1/2 tablespoon oil.
  2. Season chicken with ginger and cook several minutes until cooked through then transfer to a plate.
  3. Add remaining oil to same pan as well as peas and carrots, green onions and garlic; sauté 2 minutes.
  4. Push veggies to side, add eggs and cook until slightly scrambled.
  5. Return chicken to pan along with cooked rice and soy sauce. Stir to combine and cook several minutes.
