Chicken Fajita Mole Tacos

Ingredients

  • 1 tbsp Oil
  • 1 1/2 lb Pollo Con Chile Verde
  • 9.5 oz Mole sauce, ready prepared
  • 12 Crispy Taco Shells
  • 8 oz Shredded iceberg lettuce
  • 1 cup Medium Pico De Gallo
  • 1 cup Queso Panela, shredded

Instructions

  1. Heat a large skillet on medium-high. Coat bottom of pan with oil then add chicken and cook, stirring frequently, until no longer pink with a temperature of 165ºF.
  2. While chicken cooks, warm mole sauce in a small saucepan on low heat and reserve for later use.
  3. Once chicken is done, transfer to a bowl, draining excess liquid.
  4. To assemble tacos, place equal amounts of chicken in each taco shell and top with 1 to 2 tablespoons of mole sauce.
  5. Add shredded lettuce and garnish with pico de gallo and queso panela. Enjoy!
