Chicken Enchilada Tacos

Ingredients

  • 1 tbsp Extra virgin olive oil
  • 1/2 lb Chicken breast
  • 1 tbsp Ground cumin
  • 1 tsp Garlic powder
  • 1 tsp Ground black pepper
  • 1/4 cup Red medium enchilada sauce
  • 1/2 cup Fresh cilantro, chopped
  • 4 Wheat flour tortillas
  • 1 cup Asadero shredded cheese

Instructions

  1. Place a large skillet over medium-high heat. Add oil.
  2. Add chicken and sprinkle with cumin, garlic salt, and pepper.
  3. Cook 8 minutes per side then add enchilada sauce. Lower heat and cover pan.
  4. Simmer chicken 30 minutes or until tender. Remove from heat.
  5. In the same skillet, use 2 forks to shred the chicken into bite size pieces. Stir to coat chicken with pan drippings.
  6. Heat tortillas before adding stewed chicken. Top tacos with cilantro and cheese.
