Chicken Chilaquiles

Ingredients

  • 1 Small white onion(s), diced
  • 1 Small jalapeño pepper(s), diced and seeds removed
  • 1 tbsp Unsalted butter
  • 29 oz Diced tomatoes with green chiles
  • 1/2 cup Low sodium chicken broth
  • 1/2 cup Vegetable oil
  • 10 Yellow corn tortillas, cut into quarters
  • 2 cups Rotisserie chicken, shredded
  • 2 cups Mexican style blend shredded cheese

Instructions

  1. In a large skillet, sauté onion and pepper in 1 tablespoon of butter until lightly browned.
  2. Add tomatoes and chicken broth, then reduce heat to a simmer.
  3. Heat vegetable oil in skillet over medium heat for 2 minutes.
  4. Fry the tortilla quarters in batches until golden brown; drain on paper towels.
  5. In a large casserole dish, layer tortillas on the bottom and sprinkle chicken on top.
  6. Pour tomatoes over chicken, sprinkle with cheese and serve.
  7. If desired, serve with eggs and refried beans.
