Chicken & Chickpeas

Ingredients

  • 1 lb Boneless, Skinless Chicken Breasts, thinly sliced
  • 1 tsp Ground cumin
  • 1 tsp Paprika
  • 1 tbsp Olive oil
  • 1 cup Chick peas, rinsed and drained
  • 2 Garlic cloves, sliced
  • 2 oz Green olives
  • 1/4 cup Seedless raisins
  • 2 tbsp Fresh mint, chopped
  • 1 tbsp Lemons, juiced
  • 1/2 cup Chicken broth

Instructions

  1. Season chicken with cumin and paprika.
  2. Heat a large sauté pan on medium-high.
  3. Add olive oil and sliced chicken and cook until browned. Remove chicken and set aside.
  4. To same pan add chickpeas, garlic, olives, raisins, mint and lemon juice.
  5. Return chicken to pan and toss to combine. Add chicken broth and simmer 3 or 4 minutes.
