Chicken & Chickpeas

Ingredients
- 1 lb Boneless, Skinless Chicken Breasts, thinly sliced
- 1 tsp Ground cumin
- 1 tsp Paprika
- 1 tbsp Olive oil
- 1 cup Chick peas, rinsed and drained
- 2 Garlic cloves, sliced
- 2 oz Green olives
- 1/4 cup Seedless raisins
- 2 tbsp Fresh mint, chopped
- 1 tbsp Lemons, juiced
- 1/2 cup Chicken broth
Instructions
- Season chicken with cumin and paprika.
- Heat a large sauté pan on medium-high.
- Add olive oil and sliced chicken and cook until browned. Remove chicken and set aside.
- To same pan add chickpeas, garlic, olives, raisins, mint and lemon juice.
- Return chicken to pan and toss to combine. Add chicken broth and simmer 3 or 4 minutes.
